THE STORY SO FAR
As my gin journey continued I noticed more and more that each distiller had their own particular techniques and nuances to create their signature spirit.
I’d quite happily talk for hours about gin and find myself peering at the wonders on offer behind, (occasionally frequented) bars, scouting out beautiful and intriguing bottles and labels and deciding what to sample next.
This fascination in the art of distilling alcohol with botanicals and the various roads that could be travelled within them brought me to a new cross road.
In the summer of 2017 I realised the time had to come to take my next leap and try and learn as much as I could and pursue my licensing to distill my own crafted spirit.
As I write this it’s November 1st 2018. It’s taken me a while but I’m here and to the left of me is my tiny, 5 litre recipe still ~ Maybel. She’s got the first full test batch of Scout & Sage London Dry Gin flowing from her and in the next few days, all going well, our larger copper pot still Maud will be distilling further batches, 100 litres at a time.
It really is a Micro Distillery, with only two rooms measuring 3 x 4 metres. We’re small but we have a lot of ‘spirit’ (please excuse the pun! ) and are looking forward to bringing all you gin loving folk characterful and unique distillations.
I have one or two ideas up my sleeve. This is only the start!
